Ingredients
- 1 cup cooked quinoa
- 4, 4 oz pieces of salmon
- 1/4 cup low-sodium soy sauce
- 3 tbsps rice vinegar
- 3 tbsps honey
- 3 cloves garlic minced
- 1 tbsp minced ginger
- 1/4 tsp crushed red pepper flakes
- 2 tbsp extra virgin olive oil
- 4 scallions
Directions
- Cook the quinoa according to package directions
- Place the salmon in a small shallow dish add soy sauce, rice vinegar, honey, garlic, ginger, red pepper flakes
- Pour 2/3rds of the mixture over the salmon.
- Let the salmon marinate at room temperature for 15 minutes.
- In the meantime in a large non stick skillet heat 1 tbsp olive oil and add the salmon and and add the remaining marinade and cook for about 3 minutes
- Serve the cooked Salmon on top of the quinoa in a bowl.
