Clear Vegetable Soup


  • 1/2 tsp finely chopped garlic
  • 3/4 tsp finely chopped ginger
  • 1/4 cup chopped spring onions
  • 1/3 cup finely chopped carrots
  • 1/2 cup finely chopped cabbage
  • 1/4 cup finely chopped bell pepper
  • 1/2 cup finely chopped french beans
  • 1 tbsp olive oil
  • 3 cups water
  • 1/4 tsp black pepper powder
  • salt to taste
  • pinch of nutmeg
  • Directions

    1. In a pot take 1 tablespoon oil and add chopped garlic and ginger.
    2. Saute till the raw aroma of raw ginger and garlic goes away.
    3. Then add chopped spring onions and saute.
    4. Now add the chopped cabbage, carrots, bell pepper and french cut beans.
    5. saute for about a minute or 2 and then add 3 cups of water
    6. Season with 1/4 tsp black pepper powder and salt
    7. Add a pinch of nutmeg
    8. Stir very well and cover the pan and simmer the clear soup on low to medium flame till the veggies are done
    9. Garnish with some chopped spring onions.
