Chicken with Greens and Leeks


  • Chicken breast , 4 
  • Leeks, trimmed and sliced , 4 
  • Kale, 4 cups
  • Chives, chopped, 1/4 cup
  • Chicken Stock, 1 cup
  • olive oil
  • salt and pepper to taste
  • Directions

    1. Season the chicken with salt and pepper
    2. Heat a pan  and add olive oil and fry the chicken for about 10 minutes on each side
    3. Using the same pan, add leeks and stock. Bring to a boil and then remove from heat. Place the chicken back in the panand add kale leaves.cook for a few more minutes
    4. Serve in bowls and Enjoy!
