Carrot Soup


  • 1 bag of carrots, chopped
  • 1 onion
  • 2 cloves garlic
  • 1 inch ginger, grated
  • Broth, vegetable or bone broth
  • 2 tablespoons turmeric
  • 2 tablespoons olive oil
  • Directions

    1. Heat the oil over a medium heat in a pot. Add onions and cook until they begin to soften.
    2. Next add garlic and ginger and cook for few minutes, then add chopped carrots and cook for approximately for 10 minutes
    3. Now add broth, turmeric and bring it to a boil and then turn down to a simmer.
    4. Cook until carrots soften.
    5. Bring the pot off the burner and then using a blender, blend all the ingredients together until it  is a smooth mixture.
    6. Enjoy it warm!
