Spaghetti With Sauteed with Chicken and Tomatoes


  • Chicken breast halves , diced into 1 inch cubes
  • Whole wheat Spaghetti, 8 oz 
  • Tomatoes (grape or roma), cut into 1 inch pieces
  • garlic, coarsely chopped
  • fresh basil, 3 tbsps
  • Dried Italian seasoning
  • Extra virgin olive oil, 3 tbsps
  • salt & pepper to taste
  • Directions

    1. Season chicken thoroughly with salt, pepper, basil, and Italian seasoning
    2. Meanwhile bring a large pot of water to a boil
    3. Take a large skillet and let it heat and when hot, spray with olive oil and add chicken and cook for about 5 minutes 
    4. Remove chicken and set it aside
    5. Add pasta to boiling water and cook it according to instructions on the box
    6. Reserve about 1/2 cup pasta water before draining
    7. Take a skillet and heat and add olive oil and a dd garlic, and saute until golden brown and then add tomatoes, salt and pepper 
    8. Saute them for about 3- 4minutes, add pasta to the skillet and toss it. If pasta seems dry add the reserved pasta water and let it cook
    9. Add fresh basil and chicken and toss well.
    10. Serve it topped with cheese and Enjoy!
