1 cup - Baby Spinach, for salad base
1 - Bell Pepper, chopped
1 lb - Sweet potato, skinned and chopped
1 lb-Brussel sprouts, halved
1- Red onion, sliced
1 teaspoon - fresh oregano
1/2 teaspoon- salt
1 teaspoon - pepper
2 tablespoons - olive oil
2 tablespoons - Balsamic Vinaigrette
1 teaspoon - maple syrup
1.Mix all the ingredients except spinach and bake them at 400 degrees for 40 mins.
2.Take a bowl and put spinach as a salad base and top it with the roasted veggies
3. Top it with the dressing and Enjoy!
