Ingredients
- 3 cups fresh spinach leaves
- 1/2 gala apple
- 1/2 cup grapes
- 1/3 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/3 cup crumbled goat cheese
- 2 cups cooked red quinoa
Dressing : Dijon balsamic dressing
Directions
1. In a large bowl add spinach, cooked quinoa, apples, dried cranberries, goat cheese, and walnuts.
2. Toss until salad is combined.
3. Drizzle with dressing and toss again.
