Healthy Tomato Basil Soup


  • 2 teaspoons olive oil
  • 1 small onion
  • 1 stalk celery
  • 1 clove garlic
  • 1/2 cup fresh basil chopped
  • 1 teaspoon thyme leaves
  • 2 14-ounce cans diced tomatoes
  • 2 cups low-sodium chicken or vegetable broth
  • Directions

    1. In a medium saucepan, heat the olive oil over medium heat.
    2. Add the onions, celery, and garlic and gently saute for about 5 mins.
    3. Add the basil, thyme, tomatoes, and broth and bring it to a boil.
    4. Reduce heat and simmer for 10 minutes. Remove from from heat and allow to cool a little.
    5. Purée the soup in a food processor or a use an immersion blender.
    6. Serve it hot and enjoy!
