Spicy Salmon Bowl

Ingredients

  • 4 ( 4oz ) salmon fillets
  • 4 cloves garlic
  • 2 tablespoons honey
  • 1/4 c. chili garlic sauce
  • 1/3 c extra-virgin olive oil
  • 1/3 c. soy sauce
  • Juice of 1 lime
  • For the Spicy Mayo

    • 1/2 c mayonnaise
    • 2 tablespoon Sriracha

    Bowl

    • Cooked brown rice
    • 1 avocado, sliced
    • 1 medium carrot, grated
    • 1/2 red onion thinly sliced 
    • Cilantro leaves
    • Sesame seeds

    Directions

    1. Salmon : Pre heat oven to 350 and line a large baking sheet with foil. In a medium bowl, whisk together soy sauce, olive oil, chili garlic sauce, lime juice, honey, and garlic. 
    2. Add Salmon and gently toss. Place on the baking sheet and bake until Salmon is fork-tender.
    3. Make spicy mayo by mixing mayonnaise and srirachas sauce.
    4. Assemble the bowl by dividing rice and top with Salmon, cucumbers, avocado, carrot, red onion, cilantro, and sesame seeds.
    5. Drizzle with spicy mayo.
