2 ounces water packed light tuna,

    1 tsp mayonnaise,

    1/4 cup cucumber, sliced

   1/4 cup shredded carrot

   herbs like fresh parsley, chives

   salt & pepper to taste

   2 whole pita pocket halves

   1 tomato sliced

   1/2 cup fresh baby spinach



1. In a small bowl, combine the top 6 ingredients. line the pita halves with spinach and tomato, fill each with the 1/2 the mixture.
