This is a healthy, fresh salad option either as a full meal by itself, or as a supplement.
* Soak 1 cup peanuts in ambient water overnight
* Boil peanuts in salt water for 20 minutes, and drain
* Mix onion, capsicum, tomato in a mixing bowl.
* Add the boiled peanuts to the mixing bowl.
* Add a pinch of salt, crushed black peppers, 1 tsp olive oil, 1 fresh lime juice
* Mix and serve
