Cuban Black Beans

Ingredients

  • Black beans, 15 oz canned
  • Onion, 1 small
  • Red pepper, 1/2 
  • Garlic, 2 cloves
  • cilantro
  • bay leaf, 1or 2
  • cumin, 1/2 tsp
  • Chili pwd, 1 tsp
  • Oregano, a pinch
  • olive oil, 2 tsp
  • water, 1/2 to 1 cup
  • salt to taste
  • Directions

    1. Chop onion, garlicred pepper, and cilantro.
    2. Add oil to a pan and add all the chopped vegetables except the cilantro and let them cook until soft
    3. Add the bay leaf, cumin, oregano, salt and pepper and let it cook for a minute.
    4. Then add black beans and water and bring to a boil.
    5. Lower heat and cover and let it simmer for about 15 minutes
    6. Serve hot on a bowl of rice and enjoy!
