- Chop onion, garlic, red pepper, and cilantro.
- Add oil to a pan and add all the chopped vegetables except the cilantro and let them cook until soft
- Add the bay leaf, cumin, oregano, salt and pepper and let it cook for a minute.
- Then add black beans and water and bring to a boil.
- Lower heat and cover and let it simmer for about 15 minutes
- Serve hot on a bowl of rice and enjoy!
