Clear Vegetable soup


  • 1tsp olive oil
  • 2cloves garlic, finely chopped
  • 1/2 cup spring onion
  • 1 ginger chopped
  • 1 cup broccoli
  • 6 mushrooms sliced
  • 1 carrot sliced
  • 1cup cabbage
  • 5 cups vegetable stock
  • 1tsp pepper, crushed
  • 1tsp lemon juice
  • Directions

    1. heat olive oil in a large wok
    2. saute ginger and garlic for a minute and add spring onions and continue to saute.
    3. add mushrooms and saute for 2 minutes and then add all the rest of vegetables .
    4. now add the vegetable stock or water and salt and boil for about 10 minutes or till vegetables are partially cooked.
    5. add pepper and lemon juice for taste and let it simmer for 5 minutes and serve hot.
