- heat olive oil in a large wok
- saute ginger and garlic for a minute and add spring onions and continue to saute.
- add mushrooms and saute for 2 minutes and then add all the rest of vegetables .
- now add the vegetable stock or water and salt and boil for about 10 minutes or till vegetables are partially cooked.
- add pepper and lemon juice for taste and let it simmer for 5 minutes and serve hot.
