- In a medium saucepan, heat the olive oil over medium heat.
- Add the onions, celery, and garlic and gently saute for about 5 mins.
- Add the basil, thyme, tomatoes, and broth and bring it to a boil.
- Reduce heat and simmer for 10 minutes. Remove from from heat and allow to cool a little.
- Purée the soup in a food processor or a use an immersion blender.
- Serve it hot and enjoy!
